Sooooo who's ready for Halloween?? Because I sure am. I have this rule that says I'll never pass up cheesecake if its on a dessert menu. With this being said, I've never technically made a real, baked cheesecake. So I present you with this! Simple and quick, with a ginger snap crust to mix things up. It gets quite exciting over here. The recipe I'm using is from Live Well Bake Often, and I just switched out the type of cookie used for the crust. Once the ginger snaps were crushed and mixed with the melted butter, I pressed the mixture into a 6 inch cake pan. I used parchment paper with pull tabs that helped pull the whole thing out at the end. I then whipped the heavy whipping cream, mixed in the cream cheese, powdered sugar, lemon and vanilla. That mixture gets layered on top of the crust and the whole thing goes into the fridge for a few hours. For the spiderweb, I just used a bit of food coloring with the cheesecake mixture and put it in a piping bag for easy use. Until next time......
