Chocolate Spice Cake

While grocery shopping this week, I had the idea to fix up a boxed cake mix. After coming home and seeing what I had to work with, I picked my trusted Aldi chocolate cake as the base. Adding carrots or zucchini to cakes and breads is one of my favorite tricks, and you can rarely even tell that they're hiding in there.

My additions were dark cocoa powder, cinnamon, cloves, nutmeg, chocolate chunks, walnuts and two grated carrots! I was a little worried that all of this would weigh down the cake and make it too dense, but it ultimately kept a fluffy crumb with extra crunch from the walnuts.

chocolate spice cake:
1 chocolate cake mix
1/4 cup dark cocoa powder
1 TBSP cinnamon
1 TSP ground cloves
1 TSP ground nutmeg
3 eggs
1 cup water
1/2 cup melted butter
2 grated carrots
1/4 cup chopped walnuts
1/4 cup chocolate chunks

Combine dry and wet ingredients separately, then mix all together. Add batter to a greased loaf pan and pop into a 350 F oven for 30 minutes.

I topped mine with a bit of greek yogurt mixed with honey - it was the perfect spread and didn't make the cake too sweet.
